Committed & Atypical Master Restaurateur


Jérôme GARELLO, passionate and talented, is inspired by Mediterranean cuisine but also by world cuisine and social networks.

Self-taught with an atypical background. He leaves with mention of his formation to the hotelier Paul Augier of Nice and enchaine this one by diploma in dessert of restaurant.

Initially a pastry chef, he also worked as an extra in the kitchens of several establishments on the Côte d’Azur as well as those of large caterers.

It passes by the kitchens of starred establishments, traditional restaurants, caterer, but also of old people’s home, and big aquatic park in fast kitchen.

In 2015, he joined the kitchens of the hostellerie La Fontaine for the first time as second in command, and in 2017, he settled there as Chef.

Three years later, in January 2020, he took over the management of the establishment with his partner and future wife.

He imagines and elaborates tasty dishes with controlled cooking and punchy combinations: from the starter to the dessert, let yourself be transported by the creativity and the greed of our cuisine! He plays with vegetables in dessert, with surprising and incongruous flavors.

With him, the menu evolves with respect to nature. Even the most emblematic dishes of Nice are in tune with the colors of the seasons while being transformed by the creativity of the chef.
